Creamy Bean Soup

Since the weather is changing I thought of making a delicious comforting soup! This recipe is perfect for fall and winter and will leave you happy and satisfied.

This Creamy Bean Soup is very healthy and comforting for cold days and you can enjoy this with some crushed tortilla chips or croutons, avocado, shredded cheese and sour cream.  

You will love it!! 

Ingredients

  • 2 small carrots chopped
  • ½ onion finely minced
  • 1 tbsp. of cooking oil
  • 2 cups of cooked pinto beans
  • 1 tomato
  • 2 tsp paprika
  • 2 tsp garlic
  • 2 ½ cups of chicken or vegetable broth
  • 1 chicken or vegetable stock cube
  • 1/3 cup of heavy cream.
  • Salt to taste.

 

Directions

  1. Preheat a pot and add cooking oil.
  2. Cook the onions and carrots for 10 min.
  3. Blend the tomato, beans, broth, spices and cream.
  4. Add the mixture to the pot along with the stock cube, and cover.
  5. Let it simmer for 20 min.
  6. Stir and taste for salt.
  7. Enjoy!!

 

Pro tip: You can fry some corn tortillas in small pieces and add them to the soup. Do not forget to also add some avocado.
